When Yves Rousset-Rouard asked him to photograph the wine-makers of the Luberon in order to make this book of truffles recipes, Brice Toul enthusiastically accepted to put his talent to the service of medical research and the Telethon.
Wine and truffles are the assets of our land since Antiquity. Today, in the face of international competition, it seems right to promote this ideal combination in Provençal cuisine and to show the fruit of Man's labour and of Nature.
The truffle is considred a rare product, but, for most of the fifty-five recipes, a few grams per person are enough to share this immense pleasure.
